Optimization of bioconversion of ginsenosides from red ginseng using Candida allociferrii JNO301

Red ginseng (Panax ginseng C.A. Meyer) contains many functional components such as saponins, proteins, vitamins, and minerals. Ginsenosides are major functional components in the saponins of red ginseng. Candida allociferrii JNO301, which was isolated from Korean traditional meju, had β-glucosidase activity and major ginsenoside to minor ginsenoside conversion. The optimum conditions of carbon and nitrogen sources were 2.5%(w/v) of galactose and 1.0%(w/v) of soytone, while the fermentation time for the bioconversion of ginsenosides was 8 days at 30oC for 145 rpm. Under these conditions, C. allociferrii JNO301 converted ginsenosides Rb1, Rb2, Rc, and Rf into minor ginsenosides such as ginsenosides F2, Rh1, Rh2, compound O, compound Mc1, and compound K. © 2019 Korean Society for Food Engineering.
